Caviar, like Champagne, is a word that brings luxury to mind. Although caviar has been the ultimate in eating since medieval times, the United States Fish and Wildlife Service banned the import of caviar from the Caspian Sea in an attempt to protect the endangered sturgeon population and natural habitat.

For the time being, our celebratory caviar will not come from Caspian sturgeon but rather from the salmon in the cold northern waters surrounding Alaska. Large-grain Red Salmon Roe is another treat known for its special taste, and, regardless of provenance, these mild, slight salty eggs are served -- in their purest form -- on a bed of ice and scooped onto a toast point or blini (a miniature buckwheat pancake).

Small Cocktail Blinis are a perfect accompaniment to fine caviar. Hand-made and prepared individually. To prepare, simply place package in pot of boiling water, remove from heat and cover. Let sit for 5 minutes, remove bag from water, open and serve immediately. Place a teaspoon of caviar on top of each blini and garnish with chopped chives or parsley.

When it's time to celebrate, pop the corks and pass the caviar.

How to Serve Caviar.
