White House Chef Cristeta Comerford been working in the White House kitchen for 13 years, starting as an assistant chef in 1993. While some hoped for a radical change in the kitchen, Michelle Obama announced her family would be keeping Cristeta in charge. Among Chef Comerford's finest tools and equipment in the White House kitchen is a hard rock maple cutting board, preferred by many culinary professionals.
Made by John Boos & Co., crafters of fine butcher blocks since 1887, the board is made from 1 1/2" thick North American hard rock maple, a tight-grained hardwood that won't harbor bacteria like soft-wood cutting boards, allowing use with raw meat or fish. The surface is constructed of edge grain maple with full length solid maple rails, creating a durable surface that resists years of knife strikes yet is forgiving on sharp edges.
The cutting board is reversible, enabling you to reserve one side for strong-flavored foods (like garlic or onions) and the other for fruits or vegetables. The board is hand-sanded and finished with a food-safe mineral oil that prevents cracks or warping. Carved handgrips ensure a confident hold and the stout, 18-lb. board will remain stable as you chop. (Measures: 1 1/2" H x 24" L x 18" D and weighs 8 pounds).
